The booking process starts with confirming your date, guest count, and service format. Ichiban offers two main sushi options: the sushi buffet and the Chef's Special (omakase). The buffet is designed for group-style service — a selection of rolls, nigiri, and accompaniments that guests enjoy at their own pace. The Chef's Special is a more curated, chef-selected experience at market rate.

The sushi buffet starts at $70 per adult and $35 per child under 12, with a $700 minimum per event and at least 10 guests. Each booking includes the chef station, equipment, fresh ingredients, and on-site food preparation and service.

What does the chef bring? The chef arrives with everything needed for the sushi service: the preparation station, cutting boards, knives, serving platters, fresh fish, rice, nori, vegetables, sauces, and all accompaniments. The station is self-contained — the chef does not need access to your kitchen, though a nearby power outlet is helpful.

What does the host provide? Guest plates, utensils, napkins, and drinks are the host's responsibility unless specifically confirmed in advance. You also need to provide a sturdy table (at least 6 feet) for the chef's station. For outdoor events, a covered or shaded area is best to keep the ingredients at the right temperature.

How long does the service last? The chef arrives about 30 minutes before the reservation time to set up. The actual service typically runs 1.5 to 2 hours depending on guest count and event format, though timing can vary. After service, the chef cleans the service area.

Can you customize the menu? Yes. Ichiban can customize the sushi menu based on your event needs, guest count, and preferences. If you have guests with dietary restrictions or allergies, let the team know when booking so they can review your needs.

What kind of events work best for sushi catering? Private dinner parties, wedding receptions (as a cocktail-hour station or main course), corporate events, birthday celebrations, and any gathering where you want a clean, elegant food experience. Sushi works especially well as a cocktail-hour element alongside other food, or as the standalone main course for smaller groups.

Indoor or outdoor? Indoor sushi service works year-round. Outdoor sushi is possible in covered or shaded settings where temperature control is manageable — the fish needs to stay fresh throughout the service.
